During Scott's schooling at ABG in Vermont, his hop lecturer discussed a unique phenomenon called biotransformation, which is when a chemical process occurs during fermentation that causes yeast cells to transform hop components into new compounds. This essentially transforms the hops, often having a profound effect on taste and aroma. The hop lecturer/guru always got really excited when discussing Chinook as his favorite hop to biotransform, and what better hop to pair it with than Citra?
